Any Home Bakers Here?

I have a huge stock pot full of homemade beef stock going and right now the house smells heavenly!! Roasted the beef bones, then roasted off the veg, deglazed with a little red wine, and it’s simmering away at the back of the stove! This recipe takes a lot of time - about 2 hours of roasting, deglazing twice and simmering 8-10 hours, but oh, the end result! :love :clapI used to just dump the bones, seasoning, and veg in a pot and cook it, but one day I had more time than sense so I pulled up the more involved video and got to work. I’ve never looked back! I freeze it in Food saver bags….some with one cup, some with two cups….so I’ve always got some handy. May as well do these projects while the weather’s cold so we aren’t sweltering in here.

Between breads, chicken and beef stocks, leftover soups and stews, and meats and vegetables, I need a bigger freezer!! This little chest freezer is stuffed!!
 
Lots of area flooding, but the sun is finally out. Spring peepers are happy and singing all day and all night. Good thing I love the sound.

Made a pot of tapioca pudding earlier. I needed a little comfort food, but I've tweaked the recipe so that it's guiltless comfort food. I miss making it from fresh milk and real sugar, but it still hits the spot.
 
I did a bad thing.

I started a sourdough loaf that will require me to be up past my bedtime :oops:

It’s raining and chilly outside so I’m about to build a fire. Ella Fitzgerald, sourdough, and a fire- anything better?

Also making some chicken parm from TJ’s in the air fryer.

Sourdough is amazing!

Pop it into the fridge during the first rise and pick up the recipe in the morning.

The bread will taste better
 
Ended up with a full (to the top) gallon jar plus another quart and a half of deep brown, rich beef stock. Both containers are in the fridge overnight. Tomorrow I’ll pull the cold fat off the top, pour it all through cheesecloth one more time to pull any sediment that may have settled to the bottom, and get it all in Food Saver bags for the freezer.

Guess I’d better get some flour ordered. I’m almost out of 00, have just enough White Lily self-rising to fill the biscuit bowl one more time, and I need both AP and bread flour too, although those last two aren’t low enough for panic to set in. Yet. Thanks for the heads-up!
