Hope everyone had a nice Easter!

Whomever it was that mentioned bacon on pizza... I think I love you.
Thick cut Canadian bacon....:drool
Pre-baking the focaccia crust base fully first was the answer and gave me both a crunchy crust around the edges and a nice chewy crust in the middle.

The GF sourdough english muffin bread turned out well too. The closest thing I've had to Thomas' English Muffins since I had to go gluten free. Nooks and crannies galore, but in toast form. It needs a little altitude work still as I think it rose too high, but it's going in with my regulars.
Yes! Breakfast canadian bacon is very good on pizza!
 
I just took a frittata out of the oven. If you are wondering what to do with "all those eggs!" frittatas are the answer!

They are also good because:
--you can use up odd vegetable scraps
--it's gluten free
--it's paleo diet friendly (I think...?)
--it's easy to change it up, so it doesn't get boring

So glad I found out about these.

Here's my recipe, and it's just a general guideline. Make it yours.

Cast iron skillet (10-12")
400 degree oven

12 eggs, slightly beaten
1/3 cup milk
2-3 tablespoons sour cream
Italian seasoning
Salt
Pepper
Olive oil
Parmesan cheese

Vegetable possibilities:

Broccoli, cut into small florets
Carrots, cut into 1/8" slices
Onions, diced
Garlic, minced
Peppers, seeded and cut into small pieces
Greens of any kind
Cherry tomatoes, cut in half
Asparagus spears, cut into chunks

Sauté the veg in olive oil. You want them to be mostly cooked, and to lose their excess moisture. Add greens at the very end, so they wilt.

Mix the sour cream into the milk, and pour that into the eggs. Sprinkle any seasonings on, and stir together until just mixed.

When the veg are done sautéing, pour the egg mixture over and stir slightly in the pan so that the eggs and veg are combined. Sprinkle parmesan cheese over the top. Continue to cook on the stove on low until the eggs are set around the edges.

Bake at 400 for 10-12 minutes. Stick a knife in the center; it should come out clean. If not, bake 2-3 minutes longer.

Cool in pan. Store in the fridge.

Other things I haven't tried yet:

Grated cheese mixed in the eggs and veg instead of parmesan on top. Different seasonings. Other veg than what I've listed.

Baked Betsy Bread.. (recipe in index) I doubled the quantity, and ended up with 4 small loaves. Served one for Easter dinner, and 3 were given away.
I did some changes as I often like to experiment. Increased the hydration a little. Wanted a softer texture bread. Rolled out the dough into a rectangle, and dusted lightly with Bakers cocoa powder. Then rolled up.. and set aside for second rise. Egg wash is whole egg,,,, yolk, and white, and 2 TBS milk. Dusted tops with dry parsley flakes.

I covered the pans with additional pans for rise, and first 30 minutes baking. I baked at 410°F,, Then removed top pans and baked additional 10 minutes uncovered. The loaves tanned nicely. :) Checked with probe thermometer. They were @ 205°F internal temp. :frow

On cooling rack. 2 loaves I rolled into logs, and other 2, I rolled into logs,,, cut into 3 shorties, and placed crosswise into pans.

The cacao dusting makes a nice visual impression of a swirl.😍 It did not affect taste in flavor to much significance. The parsley likewise did not overpower the bread taste flavor. I think that in a side by side taste testing with a loaf that did not contain cacao, or parsley,,,,, There would be a HINT of DIFFERENCE. Made loaf look kind of cute:old:highfive:

I have a question to ask, but the circumstances are weird. Does anybody have a donut recipe?

It’s weird because I got a black bear tag and a baiting permit, and one of the best baits for black bear is donuts, believe it or not. I need to make my own donuts so I can use them as bait.

Anybody got a good recipe?

Yes, you read that right. I got a black bear tag. The season is already open. I just got a find time to go out and set up the bait barrel.
