Better to mix them gently so as to not introduce air and freeze in silicone muffin cups. Once frozen transfer them to a freezer bag. The egg and white will separate but the yolk won't congeal. They will last months and months.

Start this before your hens start to moult and quit laying unless you got some chicks in the spring :)
I used to go through the extra trouble like that. Really, I did.
But the stuff they are intended for gets mixed to oblivion so I didn't bother anymore. I just crack the amounts I know I'll need for a specific thing into a freezer bag, mark the date, and toss into the deep freeze. I'm kinda lazy like that. :D

And ditto that on when to start...which is usually Now! April, May, and June are usually when I out up eggs for winter baking.
I couldn't find ANY rhubarb. I'll go to the farmer's market and get some fresh and try...

Yes! I'm actually curious now. Cuz if it's something I like, it's another perennial for the garden.

Or, now that I've looked into it, a corner of the garden, or an end of the garden. Or maybe a patch outside the garden.

One of my neighbors might have some, now that I think of it... None other than Betsy, for whom Betsy bread is named, since she gave me the recipe.

Leftovers tonight. First day on the job went well. I go back tomorrow.

I also went out muzzleloader target shooting. I set my target at 50 yards, and I cannot believe I hit it.

Did I tell y'all that I water glassed some eggs last fall? Four dozen. And they are just lovely! The yolks are a tiny but fragile on some, so I have sometimes ended up scrambling dor breakfast burritos instead of cooking over easy, but other that that, they are perfectly fine for snything you may want to use them for. Taste and texture is just lovely. I recommend it. Remember to use PUCKLING LIME, not pickling salt, and read safety directions. You can get it in the canning section of your grocery store i used a pickling crock and covered it with a dinner plate but there are other options. Search "water glass" or "water glassing" here on BYC.
