Elk cooks like beef, closer to beef than venison. It is lean so keep that in mind. Venison has a gamier taste than good elk. I have always had cow elk, never had any bull in rut elk. My elk sources like to cows better for eats and only shoot a bull if it is trophy worthy. Venison dries out gets tough fast when you overcook it. Elk is more forgiving.

I prefer a young bull that has been through the rut and run the fat off. Calves are really good too.
