Any Home Bakers Here?

I’ve got two loaves of Champlain on the way. Actually they aren’t loaves yet. I fed the starter again and about midnight I noticed it was just so bubbly and lovely! I started googling around for a sourdough cinnamon roll recipe, then had to tell myself to put the phone down! You’re not putting those together in the middle of the night! :gig
 
Ok...so add half an hour to the first rise, or second rise?
Would you add any baking powder or baking soda?
Baking soda would have no rise time and use the acid in the starter for the rise. They would not be rolls but would be a biscuit.

The extra time would be at both rises but you need to watch it. You want the first rise to double and then do the poke test for the second rise.

Morning everyone.

Today, I’m doing a new type of brain therapy for my ADHD and depression. It’s called TMS. I don’t know if any of you have heard of it or not. Here’s hoping it works for me.

As a result, I may not bake that much today.

However, here’s a picture I failed to post a couple days ago.

I decided to cook the duck i was saving for Thanksgiving for dinner one day, because of a lot of stress. It was the best duck ever.

Giblet gravy and mashed potatoes and corn also.

If you can see on the side of the photo, my dog is watching. You can see his paw. He likes duck meat.
