I used this brand to make mine. It wasn't this flavor, it was their Gingerade flavor. Any brand/flavor should work, as long as it is RAW Kombucha. If it says anything about being pasteurized, all the live stuff in it is no longer alive.

Also, some brands have more alcohol than others. The bottle shown here is from this brand's non-alcoholic line. They do have a variety that is sold only to age 21 and over, but I didn't want mine to be contain alcohol.

Actually, it DOES... but it's a trace amount; about the same as in an over-ripe banana. This brand reformulated a separate line (this one) out of their original one. I think they introduced a different strain of yeast. (Scoby is an acronym for Symbiotic Culture of Bacteria and Yeast.)

One other thing: you have to make it with sugar, don't try to use honey. The bacteria in kombucha and honey are different; they don't "play well" together.

You can "train" your scoby to get along with honey, but it takes a while and several batches. I plan to try it when I get enough honey from my bees... in a year or two. :)
