Here is the rye spelt bread I baked yesterday, I only use freshly milled whole grain flour cos I got a (small) mill, what I found out is proofing the dough in the refrigerator makes for a better bread ( in my opinion) it takes longer, but also hold the shape better, before baking, take it out of the fridge at least 30 minutes( depends on how heavy the bread is) for small breads 30 minutes is sufficient, larger breads may need 1 hr.

I dug up that recipe I said I would a few days ago. I will give it a name for the index.
SOURDOUGH and YEAST raised bread.
I don't have play by play, but here is the recipe I snapshot from my paper recipes.
First line where the hole is from punch is;
1 tablespoon active dry yeast.

This recipe uses a bread machine to do the mixing. I don't have a bread machine, so I used my stand mixer to perform Step 1.
I simply mixed, and left for first rise in bowl. Then when dough doubled in size, I went to Step 2.
The 3 tablespoons of Wheat-germ, is just part of the recipe, that adds flavor to the bread. It is not a necessity. I did not have any, so I just skipped it. :idunno
The Margarine can also be substituted with butter.

On Tuesday I made arabian flatbread with yeast ( family gobbled it up so fast so didn’t get to take a picture 🤪) had some yeast left, so I made naan bread yesterday
I am sooo scared of the dentist 🙈 can’t sleep the night before an appointment, my DH always says to be grateful we can go there 😅 last time I went (2021) I got facial paralysis a few days after 😩 since I’m waiting for my hip replacement appointment, I got to get a pass from the dentist, so I went Monday, thank God I got a pass, but… of course they found a tooth which needs to get drilled 😥 got an appointment for that in a week 😬

Dentists are not my favorite people. Would you post the Arabian Flatbread with
yeast recipe. Always wanted to try making it. Aria
 
500 grams of wheat flour (alternatively you can use whole wheat flour or spelt flour)
1 tsp sugar
0,5 cube fresh yeast ( about 20 g)
1 tsp salt
1 tablespoon olive oil
250 ml lukewarm water
some ground caraway seeds for seasoning (about 1/4 tsp.)

Put the yeast in a container with the sugar and a sip of water. Let it rest for about five minutes.
Mix the flour, ground up caraway seeds and salt and then add the oil and the yeast water.
Now knead the dough and gradually add the remaining water until the dough is no longer sticky. If the dough is still too sticky, you can add some flour.
Now let the dough rest in a covered bowl in a warm place for two hours.
Then form the dough into ten balls and let them rest on a baking sheet for another 30 minutes.
Sprinkle a surface with flour. Roll out the dough balls there with a rolling pin into flat patties.
Bake the patties in a large pan ( I use a stainless steel pan, no added fat/oil for about three minutes on each side. To prevent air bubbles from forming in the dough, you can prick it several times with a fork beforehand.
When the patties are cooked through, remove them from the pan and arrange them on a plate. You can either eat them right away or save them.
Cover with a towel or put in a plastic bag or they will dry out

The preparation of the dough without yeast takes a little less time.


Simply knead the flour, salt, water, caraway seeds and oil into a dough. Then form the balls, roll them out and bake them as described above.

First time I tried making them, an Iranian friend tasted them and said they tasted like store bought ones ( in a good way) 😁
