Any Home Bakers Here?

I have some dried starter as well if anybody wants some. It is very lively! I think this was originally a commercial strain, but I got mine from my pastor's daughter, who makes and sells 8 loaves a week at the local farmer's market. Mine does not have the history @ronott1's has, but it works really well and has a nice, complex sour flavor.

I do replenish using weight now and do use equal amounts of water and flour. That makes a thicker starter that works well
@jnicholes, I also messed up the starter @ronott1 sent me. I know you like gadgets, so I encourage you to invest in a digital scale if you can. Feed the starter by WEIGHT, not volume. I give mine 100g each of water and bread flour. This comes, by measure, to just under a cup of flour and about half a cup of water.

If mine is a little sluggish I will feed it every day for two or three days until it gets lively again, keeping it on my counter. But then I'll put it in the fridge and ignore it for up to a week. Usually I do this right after I've baked and I don't need to bake again for about a week. But when I'm ready to use it, I'll take it out the night before and let it get to room temp overnight before feeding again.

I was making chocolate chip cookies, but the monster in the dark bedroom called me in, and handed me back the trash from her lunch, and the jar of pb. It was in my hand anyway, so I put a huge glob in the mixing bowl (about 1/2 C ), and added 3/4 C more flour.

I was going to add some guinea pig pups to the picture, but I don’t want them adding their own chips.
