Sometimes in Life we do NOT have choices.....we do the BEST WE CAN. Focus
on what YOU HAVE.....WHEN YOU FOCUS ON WHAT YOU HAVE, YOU GET
GET WHAT YOU LACK. I HAVE been working on staying positive.



Everyone needs to be positive or at least have a half full glass or life can get very gloomy.

This was Saigon cinnamon from Costco. We both love cinnamon and think this one is pretty weak. Also it was a new recipe for me. I had never actually made a recipe called pie filling. Always just put the apples and cinnamon, sugar etc into a pie crust. Using clear jel made it look kind of cool but tastes more like McDonald’s apple pies. So now that I have only 14 jars left I’ll have to remember to add some lemon juice and I could order some perkier cinnamon. View attachment 3686412
I cut back some on the Clear Jel in my recipe so it's not quite so thick. I have a friend who is allergic to cinnamon so I started leaving the cinnamon out until I make the pie. When I did add cinnamon before canning, I learned to add it after I added the apples to the thickening mixture because it didn't turn so dark in the jars. I'm not sure why this made a difference but it did. Maybe because the mixture had cooled a bit after adding the apples???

Also very handy and easy to use when you want to bake a pie or an easy apple crisp, etc.

Thanks for your input! It’s the first time I ever used the stuff, it could stand to be a a little thinner. It did made it very fast to put an Apple pie together. I bought the hand crank corer/peeler/slicer when I decided to make the filling, and whether or not I can filling at least I have a lightning fast way to process the apples!🍎
