I baked a loaf of bread today using the recipe on the back of the flour bag. It was a no knead recipe. That should have been my first clue. It was an overnight rise and did rise well. Baked it as directed in a dutch oven for 45 minutes with the lid on and 10 more minutes with the lid off. That loaf was so dense It was like sawing wood! And was so tough even the chickens had trouble eating it! Needless to say I won't be using that recipe again.

I saw that my apples were getting old, so I peeled and cored them yesterday. Baking got interrupted, so I had to get to it today. I already had a busy day planned, but it was worth it. :drool
As usual, I didn’t measure.
I used about four ounces of cream cheese instead of butter in the cinnamon rolls. I went heavy on the cinnamon, and used relatively little sugar (about 1Tb cinnamon, 2 sugar).

I added more apples after taking the picture. The bigger the apples, the better the flavor.

While not as tan as my usual rolls, they are done. They are full of flavor, and the cream cheese is just present enough to be worth using again. As an extra bonus, the paper is clean. I guess the thicker cream cheese didn’t run like butter.

I baked cookies for a luncheon tomorrow.

I baked a few other little things with the apples, and put a bunch in the freezer. I am pondering apple pie muffins or hand pies.
