Let them sit about 3 days from the demise to roasting them.

If you don’t mind me asking, why do you let them sit for three days before roasting? I’m just curious.

We are at 60 degrees....little sun...in and out. Warmer weather in the 80 degrees forecast for rest of Week??????? Who knows??

If you don’t mind me asking, why do you let them sit for three days before roasting? I’m just curious.

To let the meat pass through rigor mortis and relax. If you cook it while it is in rigor mortis it will be tough meat.
