Jared, when I make turkey gravy, I make broth with the turkey neck for most of the liquid for the gravy. Can you do the same thing with the duck's neck?

Yes, I saved the neck, and it might work.

If you want to use giblets, as far as I know both turkey and chicken giblets are available in grocery stores.

No offense, but I prefer duck giblets. I could mix with other giblets if I need to, though.
 
I usually cut off the tip of the wings ( where 2 bones are) cos usually, there isn’t a lot of meat on it, and use it for sauce, I cut up and roast diced veggies ( onions, leek, carrots, celery root and if you can get it parsnip root) in duck fat , also the giblets, neck and wing tips, then add water, a teaspoon of apple cider and slow cook for at least 3 hrs, then I strain the gravy maybe add 1-2 dried plums and a pat of butter, mix it very fine in a food processor , done, if you like, instead of the dried plums some orange juice and (organic) finely grated orange peel taste great too, if you habe time, roast the duck, cut off the meat and add the carcass to the gravy and then slow boil for 3 hrs, that would make the gravy perfect, to serve , you could reheat the meat in the gravy…

You can always chop up some of the turkey and duck to add to the gravy as you increase the amount.

Good morning Bakers! I'm up to my ears in jalapeno and cayenne peppers. I've canned, dried and frozen enough for at least 2 years. Some will go in gift baskets and I'm making Cowboy candy for hubby.

OK guys, I need some advice for Thanksgiving.

This time, we’re gonna have around 18 people at our house. I’m gonna need to make a lot of gravy. This recipe doesn’t make much, and I’ve only got one set of duck giblets.

I need an opinion, do you think I need more giblets to feed everybody this gravy on Thanksgiving?
