Any Home Bakers Here?

Today, I’m not really doing much baking. I’m actually doing garden prep. It took me an hour to do this with a rototiller.

That’s a 30 X 40 space. When I realized I got it done in an hour, this went through my head.

I know I should know, and I don’t know how I don’t know, and you know that I should know, but I don’t know.
I was asked to make cinnamon rolls for the church. I would rather not reheat them. So, leaving at 9, lunch at 1, how do I do it? My thought was to freeze after shaping the dough, then overnight thaw. I assume they will still be pretty cold come morning. Keep in church refrigerator to keep from over proofing, then allow to sit on counter from 11:30-12, and bake. That gives 30 minutes to reheat other food (2 ovens though), and for the rolls to not be molten lava.
Sound good?
 
So made banana bread this morning.
Went to the hospital DH was back awake doing lot's better.
2 kisses and a hug followed.
Doctor said he is a spitfire right. I said he is my spitfire !
Doc asked if he wanted the surgery to clean the poison out
of his bladder.
DH said do it!
The bread recipe calls for egg yolks reserve the whites.
whip the whites with a tad of sugar add it last.

My route would be,,,,,,
Bake ahead of time. Don't overbake,, meaning to be careful not to dry them out. Leave them in pans if possible.(if you have enough pans) Don't frost them at this point.
Then at the lunch gathering, get creative, possibly do something like this,,

Place into oven to warm up, and then do the frosting.

Rolls are baked in an hour and a half.
