My plants very much disagree. My fault for taking until late July to plant them View attachment 4195946

Thankfully someone at the other side of my neighborhood gives away tons of free zucchinis so I snagged a couple 4+ lbs ones for the bread and to save others from getting it thinking it will be like the smaller ones. I was able to freeze 5 loaves worth of shredded zucchini from 2 of them

It is nice that the neighbor can get you some squash!

Guys, I need baking advice. Fair warning, this will sound gross.

I was looking through the Armenian cook book I got from the exchange student, and one recipe calls for lamb brain. No joke.

Are brains edible? I never heard of them in a dish.

Yes, they are, but ever since mad cows disease and wasting deer disease, I have no longer considered consuming brain of any animal

I was looking in the index, and I didn't find any zucchini bread recipes. This one is gluten free. Since zucchini bread is already pretty dense, it doesn't matter that it's "another kind of dense gluten free" bread.

Zucchini bread with almond flour (gluten free)

Ingredients:

1½ cups grated zucchini
2¼ cups almond flour
1½ teaspoons cinnamon
1½ teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
3 eggs
½ cup brown sugar
2 tablespoons coconut oil, melted
2 teaspoons vanilla

Instructions:

Preheat oven to 325°F. Grease 8x4" loaf pan.

Place grated zucchini in a clean dish towel and wring out any excess moisture. Set aside.
In a large bowl whisk together almond flour, cinnamon, baking powder, baking soda, and salt.
In a small bowl whisk together eggs, brown sugar, oil, and vanilla. Stir wet ingredients into dry and then gently stir in zucchini. Pour into prepared loaf pan and smooth the surface.
Bake on the middle rack for 45-50 minutes, or until loaf is golden brown and fully set. A knife inserted into the middle should come out clean.

If I only had eggs all my old hens are molting, and my only hen from 2024 can’t pick up the slack my hens from this year are too young to lay eggs..

I’ll post the recipe later, my family is having a big problem with one of the exchange students.

She lied in her application for the exchange student program in several areas. We also think she is an undiagnosed bipolar. This came from the program coordinator.

She may go back to Poland.

At least the one from Armenia is working out.
