Store-bought or wild, I always brine my ducks. Trust me, it makes a huge difference.

This is the one I followed. I used King Arthur's measure for measure GF blend. It turned out really well!

I just realized I forgot to get a picture of the Vincent Price chicken I roasted yesterday. I guess I forgot because it was so delicious. Sorry about that.

Duck is done brining and is in the crockpot.
