Any Home Bakers Here?

Found an old picture of me cooking. It goes back to 2021, during a time when I was experimenting with Flambé techniques.

I am not a fan of stuffing out of the bird,
Wife makes the stuffing that goes into the turkey, So I don't have ready to post ingredients at moment. I know it contains ground beef.:drool.... Stuffing is close to the top of the turkey dinner.
We don't use ready to use Box stuffing mix, or croutons, solo. At least not exclusively. But maybe a small portion. :idunno
I usually wolf down a turkey drumstick,, because cant offer those portions to grandchildren. The tendons are hazardous for littles as choking hazards.

My dh used to make the stuffing, an out of his head recipe. I jotted it down, glad I did. It has Jimmy Dean's bulk sausage in it, plus bagged stuffing mix, chicken stock, eggs, celery...I think that's most of the ingredients. I'm not a fan of sausage, but his recipe is SOOOO good, especially when cooked in the bird.

I refuse to by actual liquor due to religious reasons. I know in the past I used extracts of Banana and Rum, but I am trying to figure out how much extract to use.

This recipe calls for 2 fl oz rum and 1 fl oz banana liqueur, so how much extract of each should I use?

I would like help figuring this out.

I also do not consume adult beverages now,, but not for religious reasons.
I do use rum in my baking. Usually to hydrate my raisins. Just a little FYI,, When my cake bakes,, all the alcohol evaporates, so the only thing left is the rum flavor.
I am not familiar with the Extracts you are using, but have a suggestion on amount to try.
1 OZ of rum, = I would use one teaspoon of extract. Same with the other Banana extract.
Then bake, and try how you like the flavor. Then adjust amounts from there.
