Any Home Bakers Here?

I've had this oven 20+ years and don't know what to use the convection setting for. The info book that came with it does'nt give any instruction and I called the manufacturer way back when and they couldn't help! I just don't use convection.
I have a convection setting with my oven. Early on I tried it. It worked okay with pizza.

Some things should not have their cook times sped up. There is a place for slow cooking.

I no longer even think about using the convection setting.

When we bought the house, the previous resident said that you could roast 250 potatoes in here at once. It was here when this building was part of the school, and it was left here because it would not fit out the door.

It’s a good oven, but it only does convection.

As you can see, I got the bread rising on top of the oven. I’m going to try again, this time I’ve lowered the temperature by 25°, and I’m gonna add a big tray of boiling water in there.

I’ll keep you all updated on how it goes.

Looks like the biscuit oven at a McDonald's I worked at in the 1990s.
