Any Home Bakers Here?

That's good to know! I'm very new to sourdough and was just wondering that today. I accidentally overproofed my last one.
I let the dough rise overnight, and usally form the loaf in the morning and proof it for 3-4 hours the fridge, but today I left it in the fridge almost 8 hours.

Ahh, I think thats what I have been missing. I did the overnight proof and all the folding and window, cast iron to bake on, steam pan ect, but I didnt do the final rise in the fridge! I bet that's why it hasn't been right.
