I’m going to be doing a lot more baking for the next few days. My mother is in the hospital. She went last night.

A while ago, I posted about my bread constantly splitting. My suspicion then was that it was because I was using a convection oven.

Today, I confirmed that was the problem. I tried the French bread recipe that constantly split, and it did not split as bad as when I had the convection oven.

Now I just need to adjust the rising time. If I can take care of that, the bread should not split period.

She’s on the upswing now. She is feeling better, just very tired.

Made 5 loaves today. Yes, you read that right. 5 loaves. 2 French loaves, 2 white loaves and a pullman loaf. The pullman and white loaves are still rising, the French loaves are done.
