Any Home Bakers Here?

My first attempt at "cloud bread". Flavor wise it turned out ok. My mom likened it to angel food cake. I'm going to try a second one in a loaf pan and add the egg yolks back in to try and give it more structure.

A friend told me about cloud bread as a GF sort of like bread-ish option.

What do you think of it? What recipe did you use?

This was the first recipe I used. It was good, if a bit sweeter than I was looking for. Kind of like a toasted marshmellow, slightly crisp on the outside, and soft inside. I may try it again and put it in the loaf pan. I tried to mess with the second version too much and deflated it so much, it made a loaf omelette. Fluffy on top with a dense eggy base. I tried to swap out cream of tarter for sugar to omit the sugar while still giving structure. Did not work!

I baked today....Sourdough Multigrain Seeded Bread

Looks delicious. I've not gotten into baking sourdough yet. My mom does though.
I baked for years...and September 16 ABOUT 10 years ago... I received sourdough starter from Ron (on this thread) and now I bake only Sourdough. We all like it best....and it helps digestion. PERFECT.
 
@Cloverfluff I made cloud bread a few times maybe about two years ago. The ingredients in yours is one option. I just don’t remember sugar though. I do agree it is like angel food cake. However, my recipe made circles for burger buns, not a loaf of bread. I had never seen it made into a loaf before.
It was certainly a fun experiment. I’ve actually been thinking I should make some soon. You have just reminded me that I wanted to. :lol:
