Any vegetation they won't eat?

Hi, all! I am planning a run beyond the run. It will be a grass run surrounding the traditional run. So, I wanted to put some plants in there to add some visual interest for me and additional hiding places for the kids. I initially thought grasses would be alright, and I would wrap the bases with wire if necessary. Is there anything else the my ducks and chickens won't eat?

Perennials that get taller than a foot high usually get left alone here. Vier likes to trim the grape leaves that grow below 2 feet above ground.

Things with tough leaves are generally ok. Things that don't mind nitrogen would also be good. Mine don't eat rosemary or sage. Fruit trees would also be good (though they may eat the lower leaves of some things....having said that mine leave apple, quince and cherry trees alone...but they eat the plum tree leaves).

So, maybe, I could try... hosta, tall grasses, mature rudbeckia. Anything else you can think of?
