Wednesday was navy beans and hamhocks, Thursdays were leftovers from Wednesday.
I would add ketchup... I still love the dish, but can't stand ketchup

I get that for sure. We always had food on the table, but my mom was a single mom and we had many similar meals. I adored (and still do) lima beans over cornbread. I never realized that was a meal of necessity until I got older.

I have told many many people about the banana mayo sandwiches and no one has ever tried one before! My mother grew up in South Carolina, do you live in the South? Is it a regional thing?

Nope. Grew up in Massachusetts near the Cape. My mom used to make us those all the time. One of my favorites!

I was fairly young and being dragged to events, so I wasn't the one cooking for potlucks.

Oh, some of the variations I've seen had nuts on top (why?), ham inside, or veggies. I was upset when one I tried was like half corn hidden in.

Ambrosia is alright, marshmallows, whip cream, fruit... No mayo or savory to it cause that's gross.
BUT my mom used to make banana mayo sandwiches for us when I was a kid, not a fan.
