I can venison, stew beef, chicken, and beans. I have a pressure canner. In some ways it's easier to can it than freeze it. You can just put it in the jars raw, the time is the same weather you hot pack it or cold pack it. The broth makes good noodles!!

Some old timers still water bath can meat. Don't do it. Pressure canners aren't so prohibitivly expensive to risk botulism.

I've been canning like a crazy person too. And yes...I agree you do not want to EVER water bath can any meats unless you want to be poisened. Water bath canning is for high acid foods. Pressure canning is the only safe way to can meats and low acid foods. I just put up 55 pints of salsa....massive venison stew, chili and spaghetti meat sauce...chicken soup, chicken stock, split pea soup, BBQ sauce and I also can breads...like banana bread, pumpkin bread and zuchini bread. Never heard of this? Not many people have but it's the best way to preserve bread...I hate freezing stuff since it gets freezer burnt. I rarely freeze stuff when I can use my pressure canner or water bath canner. Anyhow...happy canning everyone!
