Anyone do lots of home canning/food preserving?

Last year I had lots of apples and not allot of time so I decided to make cooked apple pie filling and freeze it.
I made straight apple filling, apple/cranberry and apple/blackberry.
Worked out great. When I want to make a pie/ tarts/muffins/crisp etc. I just bring out a container of the frozen pie filling.

I just have to throw this in- I started a big garden this year with hopes of canning. I also got Scovy ducks this year for the first time. My Roen mixed ducks stay out of the garden so I thought the scovies would too. I was wrong!

That was a big healthy cucumber row- that we were getting Walmart bags full every couple days but now NOTHING - another hard lesson learned

I am about 75% self sufficient. I have over a 1/4 acre garden, and a farm stand on my property. I don't can, but am a freezer-aholic. I freeze breads, milk, sweet breads, veggies, pie filling, and jams. If we have a power outage... I'm screwed. So I need to learn to can soon. I also make my own laundry soap, and only use my dryer on rainy days. Winter time included. I've been learning to sew clothing as well. I am an heirloom gardener, so I only raise heirloom seeds in which I can save the seed for next years crop. I also only raise heritage breed birds. I love it and won't change even if the economy straightens out!
