Looks great! Do you leave the skins on the tomatoes? Can you double stack pints in that big pot in the background of the picture?

Salsa is one of the major food groups, fer sure! I put a couple of tablespoons on my morning eggs, so I'm going to need around 50 pints for the coming year, another 30 or so to can.

I calculated the caloric value of the salsa I've made and it's just 120 calories per pint. A low calorie nutrient dense food.

Thanks! I actually freeze my tomatoes so the skins slip off when dethaw and the water from the tomatoes separates also. Then I put them in my big roaster, warm them up and emersion blend them before I add any other ingredients The big pot in the background is my Berkey. A water filtration system. Our water is awful in my town. I agree on major food group. We love it! I need to do at least one more batch. I hope I have enough tomatoes!
 
I made and canned some salsa and tomato sauce today. Using sauce for salsa was a great idea, thanks to you all for sharing because the worse part of making salsa is pealing, deseeding and chopping tomatoes for me.

I love that idea. I might just puree whole tomatoes next time I make salsa. I bet the seeds are full of good nutrients. I like processing the onions and peppers to a fine chop too, making the salsa more spoonable.
 
Since she is a new canner I didn't say anything, so as not to discourage her.
I love this. I'm a new canner and my mom is very patient when she facetimes with me (she's in a different state) and says "this is the way I do it, but you should experiment."

My dad came to visit and he stood over my shoulder and told me everything I was doing wrong.

Two different ways of teaching and to be honest, I appreciate both ways.

I never peel or deseed my tomatoes when I make salsa. Yours looks great!
