The temp dropped about 3° colder than forecast so that should put the lid on all but the collards for sure. I've decided to leave the stubble on the top of the ground instead of tilling it under to decay over winter. We get some heavy rains before it's time to plant in the spring and on our slops that would mean losing some topsoil.

You might want to visit your local county extension service for information what will and will not grow well in the area where you live as well as when seasons start and end as for growing conditions for those crops.

What grow zone are you in?

Without knowing that, for salad I’d start with leaf lettuce, spinach, arugula or similar leafy greens. Most of them are fairly quick to get from seed to harvest, and it’s absolutely possible to grow them indoors in a dollar store cake pan with some dirt. When I first started growing greens I started with salad and mesclun mix packs of seeds, and that let me try a bunch of different types at once.

Also check if you have a seed library near you, you might be able to save money on seeds getting some there.
