Anyone else butchering wedsday?

I processed 12 Pekins on Friday. They are resting comfortably in the shop fridge.

Planning on doing the next batch of 15 on Teusday. I have one more batch to do the last of June, and then nothing but extra Roos and maybe some geese.

I ended up doing mine fri to. and I hope they taste good ;)
 
i butchered 88 of mine on sat 7 wks cornish x from central hatchery...they dressed 4-6 very nice birds..then helped a friend butcher 95 same source his were a bit smaller he had a bigger pen and cut back to a 15% ration the last 3 weeks..by far the fastest we have been on the processing avg almost 25 an hour with 7 people and the help of an ez plucker..
 
Thats a good days work. I gotta see if i can rent or borrow a plucker somewhere. I only got 30 birds but it would make the job faster if the plucking time could be shortened.
