Mine is super simple.

I use the tougher cuts of meat cause they tend to be cheaper.

1 large crock pot
About a pound of beef cut into 1" chunks and browned
Dump into crock pot (lol that's for @theuglychick )
Add enough water to cover beef by 2 inches
Add 5 beef flavor bullion cubes
Cook on high for 6 hours
Add one medium onion cut into large chunks
Add sliced or mini carrots, and corn (corn is optional) as much or as little as you like.

Cook on high 30 minutes then add peeled cut up taters, again as much or as little as you like.
Cook til taters are tender.

I pull the liquid to a sauce pot and bring to a brisk boil then thicken with corn starch.

Salt and pepper to taste.

Simple, easy and tasty.

I go a little different, but the beauty of stew is you can go a thousand ways... Kiki should make hobo stew with the midget one evening.

Here's mine.

Dice up onion, carrot, celery and garlic... Put a ring of olive oil in the bottom of the pot and saute until translucent (I add a little salt to draw out the flavors). I use what ever cut of beef or bison is cheap, cut in 1" cubes. I season mine with Montreal (I mix a big jar of regular with a small jar of extra spicy). Then brown the meat. Add mushrooms and potatoes and cook for 5 or so minutes. Then add in about a cup of carrots, celery, maybe some mixed stew veg (all bite size). And some Italian seasoning blend. I'll add some beans, what ever type strikes my fancy, fire roasted tomatoes (2 cans) and a couple quarts of beef stock. Simmer until the taters are just barely fork tender then add in some cabbage leaves, or kale, or spinach. You know, something fresh and green. Depending on my mood, I'll either thicken the juice as you did or leave it soupy.

I'll also add some red pepper flake and chipolte pepper.

I see you don't use any seasoning either.
So maybe I'm not doing it wrong.
(salt and pepper are a given..they don't count)

So I use Black Pepper, Montreal, chipolte, red pepper and Italian herbs. Sometimes I'll toss in a bit of basil at the end.

Want the recipe for hobo stew? You'll need an old fashioned dutch oven and have to dig a hole for it... Requires a real wood fire too—but I guess you could cheat and use charcoal.

I mak a veggie stew with big chunks of beef shoulder or what ever beef is on sale that week.
But I don't really have a recipe..I just throw a whole bunch of stuff in a pot after I boil the heck out of the meat.

I need a real recipe.

I take stew beef and throw in a bag with flour, salt, pepper, and whatever else I have on hand. Onion salt, garlic powder, mrs dash.
Shake bag up to coat beef chunks.
Brown in pan with oil.
I use baby carrots and little tatters. I wash and then cut the tatters in half and throw it all in the crock pot.
Add water to cover it all and add a packet of onion soup mix.
Cook on low for a bit and turn up if you want. If you can wait cook on low, if you want it faster turn it up.

When tatters are to your liking it's done. I also make bisquick dumplings... that's optional.
