In your case, I’d do it from scratch. My from-scratch starter was risky and ultimately didn’t work because I live in such a moist subtropical climate mold grows on anything that stands still.

You should be fine, though. Go for it!

This is where I started, and this is where I stayed. I hope the link takes you right to the starter page and not to a generic page where you have to hunt and peck for the starter. She also has the link to the sourdough bread recipe I use the most often because it‘s almost impossible to mess it up!

My family has yeast, I'm not sure if we have a sourdough starter right now but I think we used to. We never baked with it much but I'm getting more into bread baking so I might start it up again.

Yayyyy!! Patience is key…it took my original starter (Lazy Joe) three days to get to the first-bubbles stage where I could start counting from Day 2.
