It is not much of soaking up the spinach, but helps "neutralize" the calcium in the spinach.
I will look over the link, but actually the calcium is negated in the spinach due to the oxalic acids. It is something new that I just learned. So, the info about spinach being bad due to calcium is false as the calcium is already "neutralized" by the other nutrients in the spinach. Technically kale and most dark greens fall into the same category as spinach.It is not much of soaking up the spinach, but helps "neutralize" the calcium in the spinach.
