I peeled and used an apple corer. Then I made a syrup of sugar, water, and cinnamon and then ladled the hot syrup over the sliced pears and cold packed them! They turned out really good.
my gram does that every year, we joked that my grandfather planted the tree 56 years ago just so my son would have pears. They are late pears, not even ready yet, and they are grainy but we love them. She uses a very light (sugar) syrup. I think you could make sauce just like you do apple sauce. But if you can halves as well you will have them at hand for pear pie, cobbler, to use in oatmeal or snack cakes, etc.
