Does anyone know if the Araucana egg is lower in Cholesterol than any other chicken? I have heard that it is but my chickens eggs look just as healthy as the red sex link , the white layer has a paler yolk for some reason.

Every chicken egg is just the same, no matter what breed - The only difference is the diet the chicken is given. The reason a chicken would have a paler yolk is that it is not getting out and foraging as often.
Mother Earth News did a study between free range and commercial battery eggs and found significant nutritional differences. I came to the conclusion that the biggest factors causing the difference were stress on the animal and that battery birds never were exposed to sun and the elements. Feed can also affect quality but the other factors seemed to weigh more.
Really good reading on this list. I so enjoy going back and reading all this info again and drooling over all the pretty Aras.
I have set my first eggs from my three flocks to see whom is working on his job and who is being lazy with the cold weather. I may have to rearrange the boys to increase the interest. Or sometimes only rearrange a few girls to start the roo to doing more of his job. Thank goodness spring is coming.
I have posted a thread in relation to The Laughing Crow of the Araucana Rooster under Breeds, Genetics & Showing in case anyone is interested. This topic seems fascinating.
