I gather eggs once a day. Occasionally a hen will lay an egg after I’ve collected for that day. When the temp is below freezing overnight are those eggs that were laid and in the coop overnight safe to eat?

If the egg is unbroken, I wouldn't expect to see a problem. Worst I would would expect is that the yolk might be difficult to keep intact while cooking - assuming your particular style of cooking cares about that.

Freezing does not make an egg unsafe to eat.

If the shell cracks, the egg might be unsafe (because bacteria can enter through the crack.)

So I would not eat eggs with cracked shells, but consider them safe if there are no cracks.
