I'm not sure about the color -- color genetics in chickens is SO complicated!  But I wonder if the size issue might partly resolve itself through hybrid vigor?  In other words, even though both the Dorking and the Houdan parent might be undersized, I wonder if the cross might bring the offspring up closer to where they should be?

ETA: Could start with white Houdans and white Dorkings? That would take color out of the issue at all; get type back, and then do some judicious crossing to the mottled Houdans?
