Are You Stocking Up On Food?

For shelf stability and safety reasons, stick to tested recipes for canning meats, soups, etc. (I mean some seasoning variation, etc. won't make a huge difference, but don't get ambitious and veer off recipe too far). Those websites rebel gave you should have plenty of good ones.
Ranch is right. changing a recipe can change the delicate PH balance that means the difference between safe canned goods, and botulism. You do NOT want to tangle with botulism. Up until recent innovations, botulism poisoning use to be nearly 100 percent fatal. Even with modern medicine, you get a big enough dose and they still might not be able to save you.

If I am going to add extra seasoning or anything like that, I always add extra acid to make up for the dilution.
 
Thanks everyone for info regarding soups . I am still waiting to get Presser cooker so have time to read up on everything i can until that big day of ... Canning !!!

I probably wont beable to get back to site for some time ... Has been interesting reading comments here . Ive learned a few new things & ideas ..... And hopefully will Never have to use them !!!

You want a pressure canner not cooker. I bought one at Walmart in the spring for $59, I canned all the potatoes I grew.
 
I guess they're different now. Back years ago there wasn't a difference except the canners were bigger. I still have my mother's 1950 Mirro pressure cooker with the jiggly weight and she canned in it though it's too small to put much in. It still seals and works, too! I bought a larger version of the same cooker in the 70's for canning. And it still seals and works fine too. Canned some meat and veggies in it a week or so ago.

The storm Sandy is just one of the scenerios I started this post about. I pray for all those in Florida and along the eastern coast. If ya'll don't have supplies and food on hand to get through this storm, then stop reading this and get to the store NOW! Canned goods, don't forget the NON-electrical can opener, water, fill all pots, pans and water jugs. I buy new trash cans, fill with water and place them on my front porch in a sheltered spot. Buy paper plates and cups. Lighter fluid for the bar-b-cue pit and lots of charcoal or gas cylinders for gas pit. Candles, coleman lanterns, glass kerosene lamps, flashlights, batteries and a weather radio. Ya'll get busy.

Hunker down. tie down everything you can or put it away in a sheltered place. Anything loose becomes a wind driven missile. Secure your animals. I have horses and I leave it up to them where they ride out a hurricane. I open all gates so they can go in the barn, in the woods or out in the open. They most often choose the open pasture. Take care of your chickens, small animals and let the dog in the house. Most of all, good luck and ya'll are in my prayers.
