Arizona Chickens

I just started using a smoker for my pork ribs.... a whole new world of BBQ I wished I discovered earlier. Even converted my wife into a pork lover.

I love smoking ribs! One thing I learned though, I have an old school wood smoker, I need to get temps high for at least an hour to melt out some of the fat. Otherwise, if I just run a 4-6 hour smoking at about 200˚, all the fat is still there, just smoked. With my indirect wood smoker, it's not so easy to get a temporary high temp to cook the meat. I've found that 1/2 hour on broil in the oven, after smoking, finishes them off nicely.
 
I have a weber bullet smoker (charcoal in the bottom), its pretty easy to maintain temps with. I usually keep them between 225-250 for about 4 hours and then they are fallin apart. I also remove the membrane from the bone side which tends to hold in some fat, so with that gone I havent had to much of a fat issue. Couple of recipes I have read have talked about a high heat session as well but I havent tried it yet. Now I'm hungry. I was gonna do some chicken wings on the smoker tomorrow, might have to pull a rack out as well.

* Also make sure wherever ya put your coop, its not sitting on the ground. Or the bottom will heat up, during the summer. And that where you're putting a coop, doesnt become a flood issue durin rain storms. I had to do a Raised Coop for both reasons. I live NW of Phoenix by Lake Pleasant. Granted it RARELY rains here at my house (.95 of a Inch total) but when it does, my land floods in odd spots. I also put a tarp on the east side of my coop and staked it to the ground, at an angle. It helps keep good shade as my coop backs my shed, to the west. So no heat gets into the coop in the hot afternoon.
I scavenged chicken wire, wire rack - like you would see for closet organizers, and zip ties. Any wire rack will work. Even what ya see at a clothing store. ;-) *
 
Just got back from an awesome, kick me upside the nuts, bike ride in Gardner Canyon. I am so out of shape. The ride to the end of the rode was hard, but bombing down the road all the way back was so worth it. Crossed the running creek many times, at hi speed. So. Much. Fun.


CREEK, is there camping near by??
That would make the trip... After fantacy island go set up by water..
