Well Happy 2015 to everyone!! This MUST be a better year. I am less than a week out of two surgeries again. BUT I believe we are at the end of the tunnel and that's a big ole light there! The last of the cancer is out with renal vein surgery and then there was a problem with the gut. So back in within two days. Not a pretty sight. 10 days in the hospital in Phoenix is never easy on your handicapped hubby plus he was scared to death of the cancer. Its been a long haul from the 19th of October and a kidney stone!! Prognosis is very good as there was no cancer in the lymph nodes removed and the vein had negative margins. Thus a bit of relief there. Now to get me well and I'm telling you it will be a slow, slow process. Thank goodness for good neighbors who will step in to help. The girls have been doing fine. Weather is a bit colder than usual but they are happy and content. Weather is wet but we still have straw to help the wet spots! Hopefully by the end of January I can do something other than put food in feeders!!! Although I can't even do that now - DANG. Mostly I sleep, get up and walk around a bit and then sleep some more. Throw me a positive thought here and there AND on for my DH who's trying to hold things together. May your year be chicken - enjoyable and eggciting beyond words. Just thought about the fact I was able to type a whole email without a break - progress!! WhooHoo!!
Feather pugs - so glad to hear you are recovering. What an amazing couple you are. Hoping you have family and/or friends near by to assist and support as needed. I also wanted to extend the offer of support if/when you are back in phoenix. Sometimes it's nice just to be able to sit with someone without even talking about what's going on. We just returned from a visit to NY where my father and step son both have cancer (different forms). They both are in amazing spirits. I initially dreaded the trip as I was choosing to live in the land of denial. However, am so happy we went and spent time with both of them. It's weird to say, but they gave me the strength to accept what is and keep smiling! How silly is that. A few tears mixed in with LOTS of LAUGHTER. Wishing you and yours a very healthy and happy New Year.

Honey crust! :woot


ok, here it is!

BLUE CHEESE CHEESECAKE (by Norma Sprung, Ashland, Oregon)

Preheat oven to 325 degrees. This recipe is for a 9 x 13 baking dish, 20-24 servings.

INGREDIENTS:
2 cups toasted walnuts (or pecans), finely chopped.
1 1/2 ounces grated parmesan cheese
1/4 cup brown sugar
2 Tbs melted butter (I used 4 Tbs)
honey (to drizzle over crust)
1 cup sour cream
20 ounces cream cheese at room temperature (2 1/2 packages)
5 ounces blue cheese crumbles
3 eggs
black pepper

CRUST:
Combine nuts, parmesan, sugar and butter, mix well.
Grease baking pan and press in the nut mixture to form a crust.
Bake for 15 minutes.
Drizzle honey over crust after baking (before adding filling).

FILLING:

Beat eggs in large bowl.
Combine cream cheese, sour cream, eggs, and about 3/4 of the blue cheese, beat until smooth.
Add remaining blue cheese and stir gently (this will give you a chunkier texture).
Pour into baked crust, bake for 20-30 minutes until center is set and top takes on a golden color.
Allow to cool on wire rack, then refrigerate until firm.

TO SERVE:
Drizzle top lightly with honey and grind some black pepper over the top.

I actually got two eggs the other day!  One was the marans egg, the other must have been the fully-recovered-from-molt-barred rock's egg--but both of my barred rocks have brown eggs with heavy speckling.  This egg was pinkish with not one speckle.  The egg was full-sized and in the nest box, which points to a current layer, but I'm kinda wondering whether one of the buff orpingtons or australorps finally laid an egg.  Ya know, doing a search on egg color, I really think it may have been a buff orpington egg!  Fantastic!  Er, excuse me...how EGGCITING!! 


The only hen's laying are the jungle fowl... I have been de- worming the last few months, so we are not eating their egg's.. I made homemade mayonnaise with the duck egg's.. It was just okay.. I had to improvise with the vinegar and lemon.. I'm going to try to make it again, the right way..

Anyone else make homemade mayonnaise ??
 
The only hen's laying are the jungle fowl... I have been de- worming the last few months, so we are not eating their egg's.. I made homemade mayonnaise with the duck egg's.. It was just okay.. I had to improvise with the vinegar and lemon.. I'm going to try to make it again, the right way..

Anyone else make homemade mayonnaise ??
I haven't made mayo in years and years but the biggest trick is to add to oil almost drop by drop while blending.

I only did a medium drizzle.. The blender was a big help.. I also used olive oil instead of vegetable oil..
