Arizona Chickens

We had that 12 pounder tonight with mashed potatoes, fresh green beans and homemade cranberry sauce. I'll have to come up with some recipes for about 10 more meals of leftover chicken, lol.
How do I get these monsters to cook evenly? The thermostat says 165 and it will still be slightly uncooked, either the inside of the breast or thigh, depending on which way I habenero it. Do I need to flip it over part way or cook it slightly hotter?
Happy New Years! My chihuahua is buried under a pillow next to me in the bed right now, trying to muffle the sound of the fireworks. He's scared to death. Most of the other critters seem ok.
One of the last Cornish Roos starting crowing yesterday. He sounds like a donkey. Eeeyore! I couldn't figure out what that sound was at first. It's very strange, not a chicken noise at all,

NYD Hatch is now over for me. Got 29 chicks. Mostly Icelandics (14), but I got 4 FBCMs, a few Olive eggers, a few Easter Eggers, a purebred Lavender Ameraucana and 3 Swedish Flower Hens.

The two that came from bargain's eggs. A LavAm and a black EE.

Odd question - does anyone in the Tucson area have a hen that lays blue eggs they'd be willing to sell? (My wife is starting to get obsessed by the idea of a blue egger.) We have a EE that lays green, but it seems there's a demand for a blue one.
