hello got a question for you chefs out there.

okay long story short went hunting and a friend got a big cow moose. (its about 700-800 lbs ya its big)

so does anyone here have any good recipes for moose? or wild game? thank you.

I never had any game meat.
But I would use it like beef.
Hamburgers, stacks , long and slow cooking dishes., I think that it will make wonderful meat and root vegetables soup.
What he have done with the hurt, liver, kidney, spleen, and the diaphragm?

thank you, he saved the heart and liver and my grandpa gets them (not an organ person) but yes i think it would make a great soup with root veggies. i know where planning on making some sausage. i have had moose before (about 6 years ago and i did not cook back then) and the steaks are really good but the whole animal is not just steaks :)

I would suspect Moose would be Very lean... So either Hot and fast cooking or low and slow with moisture and added fat like Beef tallow or pork fat.

But yeah Like beef... Also it would make excellent jerkey.... Lean meats...

to be honest i think moose is the leanest of all game meats we have here. well maybe not as lean as pronghorn. :)
 
any sausage makers here?
i went hunting this past weekend and harvested a mule deer buck (so did my dad and my grandpa got a doe) so i got a lot of sausage meat (moose and mule deer). really looking for any ideas of a good recipes (i like to make a mixture of sausage flavors)
