B.L.T. Soup

I thought I had posted this but can't find it so here it is:

BLT Soup..........I know it sounds yuk but is delicious


I lb. bacon cut up
2 tlbs butter
1/4 - 1/2 iceberg lettuce cut julliene style
9 tbls flour
16 oz chicken broth
1 large fresh tomato diced- I used two large cans of petite diced tomatoes
1/4 teasp nutmeg
1/8 teasp cayenne red pepper
8 oz half & half-I substituded canned milk
In heavy pan, over medium heat, cook bacon until lightly browned, do not drain
Add butter and heat until melted
Stir in lettuce and saute 2 minutes
Add flour stirring until well blended and even cook 2 minutes
Remove from heat and stir in broth, tomatoes, nutmeg, and red pepper. Heat to boiling. Reduce heat and gently boil 6 minutes, stirring occasionally.
Add half & half, mixing well. Heat to simmering, stirring often. Garnish with croutons.
This is a good winter comfort soup.
 
You did! You posted it in my bread thread and I will be trying this recipe this weekend! It sounds so good I can't wait!

I'll be trying that for sure! The people in Belgium make a "lettuce soup' using Romaine. Thanks!
