baking with duck eggs

what type of duck eggs do people generaly use for cooking. would like to raise some ducks for the eggs & beauty.
 
Runners are supposed to be good layers.

Runners are excellent layers. So are khaki campbells and welsh harlequins. None of those breeds can fly and they all lay pretty much all year (depending on available sunlight). Personality-wise, welsh harlequins are friendlier. Runners can be spazzy, but are very entertaining. The determining factor between these 3 breeds is that Welsh Harlequins have retained their brooding instincts. Runners and khakis usually don't. That being said, my runner just hatched out 10 ducklings and is proving to be a very protective, good mom. That is very unusual for runners, but it does happen.

We too raise pekin ducks for eggs and meat. Our layers, like any of the egg laying breeds, only remain cost effective for the first couple years. Production will be over 200 eggs per year, with the average egg weighing between 85 to 90 grams. Then the egg production will drop dramatically, and the ducks are then processed for dog food and sausage. We chose pekin because of the large egg size, and the usefulness of the carcass after they have ceased being productive.
 
We have 3 khaki campbells, beautiful large white eggs, great for baking with and they lay very steady all year. The ducks themselves are skittish even though we've had them since day olds they will not come to you or get too close. Mine do fly but it's lower to the ground so they can't get out of our 8foot run. I do enjoy them though, they are very easy to take care of and no drama issues like I've had with my chickens!!
 
I love my welsh harlequins... We eat their eggs either scrambled, fried, in french toast, pancakes, waffles.. We use them in baking ( cakes, muffins, chocolate chip cookies, brownies and bread) to name a few.. I also like them hard boiled.. and have made egg salad with them and deviled eggs.. Oh and omeletes..

Don't forget quiche. OMG are the quiches delicious when you make them with duck eggs.
