And the pierogies were SUPER easy. I couldn't believe it. I made mashed potatoes and added some pepper & sauteed onions. Then mixed 3 cups flour, 3 beaten eggs, 1/2 cup water and a pinch of salt in another bowl. Knead it until smooth and roll out thinly (about the thickness of an egg roll wrapper). Cut into circles with whatever you choose (I used a small dessert bowl). Put 1 tablespoon of the potatoes inside, then seal edges of dough with water and press. Cook however you want. We like them deep fried or pan fried with butter and onions.

Easy peasy. That recipe yields about 16-20 large pierogies and takes about 40 minutes prep.

Fresh Pierogies are WONDERFUL!!!!!! I grew-up in a part of NJ that had a large Russian Orthodox population. Every Christmas and Easter they would have tons of pierogies for sale at the craft fairs. Thing is you had to get there really early in order to get some.

I love them with cheese and kraut as well!!

Pierogies are high on our favorite foods list. DS was born in Russia and we ate the best ones while there. We have a Ukrainian Orthodox church that used to sell them at our monthly street fair but they didn't do it this year. We did just get to go to a near-by Russian Orthodox church's fall festival and we pigged out!! I'll have to try my own. I even have a little dumpling folding tool that I got somewhere. I use it to make Asian steamed dumplings but it can be used for small pierogies too.
 
this was my son's lunch for today. he didn't finish his spam sushi yesterday. i was very disappointed. he said it tasted funny. i figure he was tasting the carrots. when i told him about the carrots, he said "you tricked me!". lol

lunch consists of:
p&j sandwich cut out into dinasours
jam star shaped bite size sandwich
cheese star shaped bite size sandwich
(next time, i'll be using thinner bread, maybe the cutouts will come out better)
quail eggs with cute chick faces molded on them
seedless grapes
bag of chips
gummy eyeball as a treat

he loves those picks. he asked why i didn't put any in yesterday's lunch. the last time i put them in his lunch, he stuffed them in his pocket and kept them close to him all afternoon, he said.

Hee heee. I have one like that. The really bad thing about it is that he's 13 and STILL that way! He's such a Hector the Collector that I keep a couple of containers on top of the washer and dryer for all the goodies that I find each time I do the laundry.

so i went to target yesterday and found the snapwares. they snap on all four sides. the 2 cup size was $2.99. the smallest size that they have is the 1.25 cup size pictured below but they didn't have at my target. they also have a 3 cup size, 4.5 cup and on up. they have the recycle sign with a 5 and the letters PP. it also says they are microwave safe, dishwasher safe, freezer safe and another sign i don't recognize. the other thing that amazed me was the it's Made in the U.S.A.
