Best layer feed for picky eaters?

Thank you all, this is super helpful! I will keep them penned up in the run in the mornings, and also try adding hot water to my purina layena pellets to turn it into a mash for their breakfast.

(Question: are pellets fermentable?)

Yes, pellets will fall apart and ferment exactly the same as crumbles. But I will note that although I have fermented for more than 1 year and think it has SOME benefits... not ALL that people tout.
