Beyond deviled eggs~

Ok...I am going to share something I made recently that was really good, but different. I know you said that you don't want to make deviled eggs, but these are a variation that only look like deviled eggs. (Also, forewarning, I don't premeasure when I cook, so I am only gonna list the ingredients). (NO MAYO, so they're healthier too!!!)

Mustard Dill deviled eggs

1) starting with the typical deviled egg recipe...boil eggs, cut in half, mash egg yolks....etc.

2) Mix egg yolks with:
1/2 mustard (yellow mustard)
1/2 coarse ground mustard (with the mustard seeds still)

3) add in lots of dill weed. Salt/pepper to taste.

4) Pack into egg white halves and top with parika

They have a tangy taste to them and don't taste like the traditional mayo-packed deviled eggs (don't get me wrong, I love those too!!). I like them 'cause they have the familar look, but taste different and great for forkless BBQs!

(we've also made egg salad similar, but add in mustard for a twist on a egg salad sandwich!)

ETA: I was typing this post when you posted the duck deviled eggs. That sounds good!

Great minds think alike! Even when I do traditional mayo deviled eggs I always add some grainy mustard. I also never measure and I've probably never made deviled eggs the same way twice. Sometimes I use piccalilli (type of relish). The one thing I never do is sprinkle paprika all over them. I might mix some. I'm more likely to sprinkle dill all over the top.

Yours sound good too. You say to use 1/2 mustard and 1/2 ground mustard. Could you clarify that a little? 1/2 cup, 1/2 teaspoon or just equal parts wet mustard to dry mustard? Thanks
My duck eggs are cooling.

Edited for spelling error. Wish I could correct it in the quotes as well.

I'll tell you something wonderful in deviled eggs mix it up like normal then add about 2-3 spoons of pickle relish to it. OH MY they are wonderful

YES......people DO want deviled eggs!!! They are just so yummy!!!! I agree with chickabator....I always use relish (dill relish). Instead of paprika I use cayenne pepper. Gives them the traditional look with a kick.

Sorry for it not being clear. I meant equal parts for yellow mustard and ground mustard (though I am sure all ground mustard would be delicious too!). I'll have to try the relish! I never thought of that before!

I like using the relish, of whatever type, for the crunchy texture as well as the flavor.
They are done and ready to go. They have a little mayo, a lot of grainy mustard, herbamare (sea salt herb mix), black pepper, pickle relish, Tabasco and a garnish of fresh dill. I'm making them for people I've never cook for, and most of whom I've never met. Guess I'm a little nervous!

Thanks for all the great ideas. The deviled duck eggs were a big hit with most people there. I got a lot of compliments and questions about the ducks. One or two people walked away from them when they found out they were duck eggs. Oh well, their loss.
