Do they actually “fix” their chickens or are you guessing? some vegetarians eat eggs; it’s vegans who don’t.

Kathy, do you have a link to the story? The sanctuary owner is full vegan. The story about her didn’t mention fixing, but if OP spoke with her, I wouldn’t doubt it.
.As far as I know, the common practice for vegans who run animal sanctuaries (or those who keep rescued chickens) is to feed the eggs back to the chickens, sometimes encouraging them to get into the habit of breaking the eggs (for) themselves.
This way the chickens benefit from the nutrition of their own eggs.
I've never heard of "fixing" a chicken so she can't lay eggs and I highly doubt this is a thing; it makes no sense at all.
We don't know if OP has spoken to the sanctuary people; she referred to them as vegetarians and not vegans, which doesn't indicate much accuracy.
No, I didn't actually talk to these nuts in person, but I do believe they fix the hens to not lay eggs. Rowdy Girls Sanctuary in Arlington, Texas; you can check them out yourselves.
One big reason I'm really considering them now is Big Girl's limp is worse, her leg looks a little crooked. Mom's not wanting to spend the money to take her to the vet. The Arlington nuts would be quite willing to spend a fortune on having her x-rayed or have surgery if nessecary.
You have a photo of the joint? It's top joint that is sticking out, she's walking kinda crooked. We're figuring it's either a popped joint or it's broken. But there's no swelling or discoloration. She still eats and drinks just fine.
