Big's Apple Cinnamon Coffee Cake

This is so good and not that hard to make. Get the wife (our yourself) to make one of these...

Mis en Place

1 1/2 cups sugar
1 8 oz package cream cheese
1 stick butter
3 eggs

2 pippin apples, peeled and cut into very small pieces
1/4 cup sugar
1 Tbls cinnamon
2 Tbls orange juice


2 cups all purpose flour
1 1/2 Tsp baking powder (the stuff in the red can)
1 Tsp salt

1/4 cup sugar
1 Tbls cinnamon
3/4 cup chopped walnuts
1/4 cup powdered sugar

Preparation:

Preheat oven to 350. Butter a pyrex casserole or 10 inch spring form pan. Line it with parchment paper cut much larger than pan so parchment overlaps the edges by about 1 inch all the way around.


Cream sugar, butter and cream cheese until well combined and very smooth. Add eggs one by one until you have a nice smooth batter. Next peel your apples and combine with sugar, cinnamon and orange juice and let sit. Now add flour, salt and baking powder to your batter, mix at medium speed about 1 minute. Now dump apples and all juices into batter and mix 30 seconds. Pour batter into parchment lined pan. Combine 1/4 sugar, cinnamon together and sprinkle over batter. Now sprinkle chopped walnuts over that and place into 350 oven for 60 to 70 minutes, or until a sharp knife comes out clean/ Let rest and cool about 30 minutes. NOW remove the cake from the pan by carefully grasping the parchment paper to lift out the coffee cake... Dust generously with powdered sugar. Cut with serrated knife and serve with scrambled eggs. You'd swear you could open a B&B with this stuff...

Wow, that looks beautiful. My husband is going back to work on tuesday after being unemployed for 3 months. I will make this for him to celebrate his first day in.

So I made one this afternoon! Fabulous. I let it cool a wee bit and then sliced it up so I can wrap it nice for my husband to take to work tomorrow.

Course I HAD to try a tiny sliver to make sure it was as good as it looked.
It should get him a dollar raise the first day!

Well our local grocery store has a sale on apples, 5 three lb bags for $5. We bought 5 bags yesterday and hubby asked what I was going to make with all those apples. I guess I just found something. Yummy!!!!
