Make a batch of garlic oil in the blender. Cook off 1 lb. of your favorite pasta shape (would be great with orichette or penne) and when pasta is el dente drain.
Mis en place:
Garlic Oil:
1 Cup EVO
8-10 big cloves garlic
Puree in blender until garlic is totally pureed
White pasta:
1 cup yellow onion, small dice
4 Tbls Garlic Oil
1 can drained cannelinni beans
handful fresh chopped flat parsley (leaves and stems)
Cook off pasta and drain. Heat garlic oil in pan, saute onion until almost clear, toss in cannelinni beans and mix well, add half of drained pasta to pan, add parsley and toss well. Remove to large bowl and add grated parmesan.
BLACK PASTA:
1/2 cup pitted oil cured olives (also called nicoise olives)
1 cup yellow onion, small dice
4 Tbls Garlic Oil
Add Garlic Oil to same pan, saute onions until almost clear, meanwhile add pitted olives to blender with remaining Garlic Oil, pulse on high speed until olives are almost completely pureed. Add remaining cooked pasta to pan and toss. Fold in black olive/garlic oil mixture and heat 1 minute. Remove from heat, garnish with fresh chopped parsley and parmesan cheese.
Serve a little of each pasta together with some garlic bread. Massive !!
