Now before you wrinkle your nose at this, give it a try.
I made these last night for Steve and we both enjoyed them.
15oz can black beans (drained & rinsed well)
4 large eggs
1/2 cup or 12 packets of Splenda
3 Tablespoons cocoa powder
2 Tablespoons strong coffee (or 1 T instant coffee dissolved in 1 T hot water)
1 teaspoon baking powder
2 Tablespoons canola or olive oil
1 teaspoon vanilla
Preheat oven to 350 degrees. Prepare an 8X* baking pan by spraying it with cooking spray. Mix allingredients in a food processor or heavy duty blender. Add the beans last and make sure you blend very well. Bake for 30 minutes, or until toothpick comes out clean. Allow to cool before slicing. Brownies are approx. 2 X 2 in size. Makes 16 servings at 79 calories each.
If you are looking for a healthy snack or after dinner dessert give these a try. I think next time I will add some walnuts to them. You can taste the beans in here at all......Steve said he would never of guessed if I had not told him.
