I've decided to use the black jack on the floor and up the walls as I've seen recommended but I was curious could I use it to cover the roof without adding shingles? I'd gladly hear advice on the roof if something like that is not an option. Thanks!!

What type of roof does/will your coop have?
You can use Rubr-Coat Black Jack 57 to coat the roof but you need two coats. One gallon covers 50 ft2. 15 days after it cures, you must top coat it with Eterna-kote to make it fully waterproof.
If you add up the components to put a shingle roof on the price is about the same. But probably a lot less messy and will look better. Just MHO.

I have no experience with it, but the name suggests that it would not be a good roof coat in hot climates. *thinking out loud*

It will not last but a couple years to 3 and you will have to recoat. I have never used it on a coop but plenty of experience on other buildings but never as the main roof material. It is more for repairs/leaks over existing commercial flat roofs. You will do better with asphalt shingles or metal roof etc.... Put a pitch on the roof if this is a new build either way.
