What do you do to hang the carcass? I have heard of hanging them before but didn't know people still do that.
I want to perfect my technique in preparing backyard birds.
I hung her by her feet with a rope, & wings open. Helps gravity pull on the limbs.
 
And you only do this in cold weather? Before or after plucking and gutting? For how long?
Yeah, cold weather. Temperatures between 35°F - 45°F.
She was hung before Plucking, & Gutting. She was hung for 24hrs.
As long as Temperatures are favorable, you can go longer.

Genetics also play role in tenderness. Learned about this recently.

I haven't been following your project too closely. Who are the parents of your roosters? The original hen and her father?

Father was Dino. He was (F2)Buff Orpington/Barred Rock X Buff Orpington/Australorp.
