What do you do to hang the carcass? I have heard of hanging them before but didn't know people still do that.
I want to perfect my technique in preparing backyard birds.

I hung her by her feet with a rope, & wings open. Helps gravity pull on the limbs.

Yeah, cold weather. Temperatures between 35°F - 45°F.
She was hung before Plucking, & Gutting. She was hung for 24hrs.
As long as Temperatures are favorable, you can go longer.

Genetics also play role in tenderness. Learned about this recently.

Father was Dino. He was (F2)Buff Orpington/Barred Rock X Buff Orpington/Australorp.

Mother is a Cuckoo Easter Egger. She looks different from this now.

Do you think Vitiligo could be responsible? I saw a lot of studies on it when I visited U of Arkansas (I was on a collegiate poultry judging trip.)

I've ruled it out. Supposed to glow bright white under black light, & the feathers/skin don't fluoresce.

For humans, yes, but I don't see anything about chickens with Vitiligo fluorescing.
